EGG WHITE CASSEROLE
~ 30 Large egg white with only 3 yolks (scramble them up) or 1.5 qts. of egg substitute 
~ Sauté in a non stick pan (in water) onion, mushroom, zucchini squash, spinach, pepper and garlic.
~ Put eggs in a casserole dish, add veggies (make sure water is evaporated), mix it evenly in dish, then bake for 30-45 min. @ 375 with it uncovered.
~ When cool, cut into 10 servings ~ Store in some form of Tupperware

TURKEY MEATLOAF
~ Two packages of ground turkey
~ 1/2 cup of breadcrumbs 
~ parsley, basil, oregano, sage, thyme, or (Italian Seasoning), garlic powder, black pepper, red pepper
~ chopped onion, chopped bell pepper
~ two egg whites and BBQ sauce, or Marinara, or Pesto sauce
~ mix all together in big bowl with your hands ~ put it in a loaf pan, flatten the meatloaf to make it even from front to back of loaf pan, then poke holes in meatloaf and cover with foil
~ bake @ 375 for about 20 minutes, drain excess fat, if you need to cook it longer then put the foil back on and bake for about 7-10 minutes. When it is almost finished, remove foil, add Sauce to top and bake until Sauce is dried up (3-5 minutes)
~ When cool, cut into 10 servings
